Prepare the Rice Paper
Dip rice paper briefly in water until soft and pliable.
Assemble
Place shrimp and coriander on the rice paper, then fold into small parcels.
Air Fry
Arrange in the air fryer basket and cook at 180°C for 8 minutes until crispy.
Serve
Serve hot with sweet chilli sauce for dipping.
